changing of the seasons [Added February, 10, 2009]

With the season for wild game almost over, we say make the most of what is still available, and if you can, freeze some for March.  

One revelation for this month is forced rhubarb, grown mainly in the Wakefield Triangle of West Yorkshire.  This delicate pink shoot makes a superb companion for dishes both sweet and savoury.  It is a particularly good companion for pork.
