Once bitten by the cheese bug, there is no alternative but to become fanatical about it. It has more regional variation than any other food in this guide, not to mention taste, texture, maturation, and types of milk used. A good cheese counter can often be found inside a delicatessen, although dedicated cheesemongers are found throughout the country. Cheese should be ripe and ready to eat when it is bought. Ask the advice of the shop staff and they will offer you a taste. Don't be afraid to contrast and compare. Take time to find what you like, you'll be glad you did.
