The artisan production of these three items have been driven almost into extinction by bureaucracy and supermarkets, but a hard core of dedicated producers are fighting against the tide to give us extraordinary produce.
-butter-Traditional butter production is labour intensive, and so there will be a noticeable price difference between artisan butter made on a farm, and what you can buy in a supermarket. If you give it a try, you'll also notice that the quality is completely different - creamy, unctous and utterly delicious.
-milk-Milk and cream are increasingly available from dairy farmers who find themselves unable to survive selling to the supermarkets. So, they diversify into producing beautiful, high quality milk and milk products from their herds. One product becoming more and more popular is raw milk, which is unpasteurised. Raw milk in its untreated state is deemed to be easier for the human body to digest, and it tastes delicious, but there are issues to be aware of. Exceptional standards of hygiene are needed to make untreated dairy products safe to eat and drink. If in doubt, don't, but also, don't be afraid to ask (or to look) at how your milk is produced. Most producers will be more than happy to show you.
-eggsPlease only buy free range eggs. Please buy them locally. The difference between a dozen free range eggs of fine quality, and a dozen battery eggs really isn't going to break the bank. If you were shown a picture of how the battery hens are kept, you'd gladly pay the extra.
