These tables are concise and only show what is in the peak season for each month. Each type of food will usually be available for around a month after it goes out of season.
Beef, poultry and pork aren't seasonal in the same way as the other meats featured in these tables and so can be eaten all year round.

What could be better than a lovely piece of pork with crackling? We cooked a piece of pork three years ago for a Sunday lunch that was so memorable that we still talk about it now. Find a good butcher and go for something other than chops. Remember, we need a little fat on our pork to make it easy to digest, which is a good excuse for another helping of sweet, sweet crackling.
