Beef, poultry and pork aren't seasonal in the same way as the other meats featured in these tables and so can be eaten all year round.

British mussels are some of the best. Look for ones of a good size and try not to be tempted by the New Zealand varieties, as they do not compare with a good British crop. A mussel's sweet, creamy flesh is best cooked simply, and they are great for serving lots of people at parties. Wash the mussels in clean water, scrape off the barnacles and debeard them.
