Elvers were once a major delicacy across Europe, but commercial exploitation has seen a big drop in numbers. The young fry can legally be caught in Britain, and they are exported to Asia for eel farming. Population levels are thought to be down to one percent of former levels. Climate change is also affecting them. If you do catch them, and the likelihood of this happening is only really strong in the South West, and if you have a friend with a fishing tump (elver fishing spot), then they are best fried in bacon fat. Delicious.
