These tables are concise and only show what is in the peak season for each month. Each type of food will usually be available for around a month after it goes out of season.
Beef, poultry and pork aren't seasonal in the same way as the other meats featured in these tables and so can be eaten all year round.

Why do we eat Stilton at Christmas? Stilton is particularly affected by the diet of the cows who provide the milk. Due to the time it takes to produce Stilton, a Christmas Stilton contains the milk from cows on winter fodder and so is richer and creamier than at other times of year. Stilton is often used in cooking, but it is really best eaten on it's own. Perhaps with a biscuit.
